Mango Salsa

I learned this recipe when I was working as a cook for luxury events years ago and have never stopped making it. This mango salsa is SO. GOOD. I promise you – you and your family and friends will love it. 

It’s simple ingredients, fresh flavors, and you get the best of the sweetness from the mango paired with the tangy lime and savory pepper flavors. I’ve been known to devour this entirely with some chips but it’s also great served over chicken tacos. 

Nothing feels more like summer than having some of this mango salsa on the patio and enjoying a margarita.

Mango Salsa

Mango & Yellow Pepper Salsa

Ingredients
  

  • 2 Mangos
  • 1 Yellow Pepper
  • 1 Jalapeño (fresh)
  • ½ Red Onion
  • 2-3 Tbsp Lime Juice (fresh)
  • 2-3 Tbsp Cilantro
  • 2 tsp Sambal Chili Paste (to taste – depending on your spice level)
  • 2-3 tsp Salt (to taste)

Method
 

  1. Peel the mangoes and dice into small pieces and add to a medium size bowl.
  2. Dice the onion, yellow pepper, and jalapeno into equally small piece. Try to keep all piece similar in size to each other. Add these to the bowl with your mangos.
  3. Mince the cilantro & add to the same bowl with all other ingredients.
  4. Squeeze fresh lime juice into the same bowl with your mangos and peppers. Typically 1-2 limes depending on how much juice is in them. Start with a small amount and taste it as you go.
  5. Add a teaspoon (or more!) of the chili paste. This will adjust how spicy your salsa is – so start small and taste as you go until it has the heat level you like.
  6. Add salt and mix everything together. Start with 1 teaspoon of salt and taste as you go… you can always add more but can never go back.

Notes

If you don’t have access to fresh mangos then the bagged frozen mangos work well too! You will want to chop the chunks into smaller pieces.
